Ingredients

  • 3 large potatoes (peeled & chopped)
  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups spinach or kale, chopped
  • 1 can chopped tomatoes (or fresh diced tomatoes)
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 100g feta, crumbled
  • Salt & pepper to taste
  • Optional: Cherry tomatoes for topping

Instructions

  1. Preheat oven to 200°C (390°F).
  2. Boil the potatoes until soft, mash with olive oil, salt, and pepper.
  3. In a pan, heat olive oil and sauté onion and garlic until soft.
  4. Add chopped spinach/kale and cook until wilted.
  5. Add diced tomatoes and simmer until mixture thickens.
  6. Season with salt and pepper.
  7. In your Dish – Falconware Lasagna Dish, layer the veggie filling, then spread the mashed potatoes on top.
  8. Top generously with shredded cheese and crumbled feta. Add cherry tomatoes for colour.
  9. Bake for 20–25 minutes until golden and bubbling.
  10. Serve hot and enjoy!
