Vegetarian Cottage Pie Recipe

Ingredients
- 3 large potatoes (peeled & chopped)
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 cups spinach or kale, chopped
- 1 can chopped tomatoes (or fresh diced tomatoes)
- 1/2 cup shredded cheese (cheddar or mozzarella)
- 100g feta, crumbled
- Salt & pepper to taste
- Optional: Cherry tomatoes for topping
Instructions
- Preheat oven to 200°C (390°F).
- Boil the potatoes until soft, mash with olive oil, salt, and pepper.
- In a pan, heat olive oil and sauté onion and garlic until soft.
- Add chopped spinach/kale and cook until wilted.
- Add diced tomatoes and simmer until mixture thickens.
- Season with salt and pepper.
- In your Dish – Falconware Lasagna Dish, layer the veggie filling, then spread the mashed potatoes on top.
- Top generously with shredded cheese and crumbled feta. Add cherry tomatoes for colour.
- Bake for 20–25 minutes until golden and bubbling.
- Serve hot and enjoy!
