- 8 cups fresh figs, chopped
- 4 cups sugar
- ½ cup lemon juice
- ½ cup balsamic vinegar
- ½ cup water

Prepare your jars
Sterilise your jars and lids thoroughly. Place a few small saucers in the freezer - you’ll use these later to test the setting point. -
Cook the figs
Add the chopped figs, sugar, lemon juice, balsamic vinegar, and water into your preserving pan. Heat gently, stirring until the sugar dissolves, then bring to a boil. -
Break down the fruit
As the mixture cooks, lightly mash the figs to create a smoother texture. Stir frequently to prevent sticking. -
Simmer until thickened
Continue boiling until the mixture thickens. Test by placing a spoonful onto a cold saucer — if it wrinkles when pushed, it’s ready. -
Finish and jar
Remove from heat and skim off any foam. Using a canning ladle and preserving funnel, carefully fill your sterilised Kilner jars. -
Seal and store
Seal immediately while hot. Once cooled, add decorative labels and store in a cool, dark place.
