Ingredients (serves 4)

4 chicken thigh cutlets (boneless, skinless)

1 cup panko breadcrumbs

½ cup plain flour

1 egg, beaten

Salt & pepper

8 slices sourdough or ciabatta

1 cup fresh rocket
-
½ cup grated carrot (optional crunch!)

Aioli or mayo, to serve
Method

Crumb the Chicken – Season flour with salt and pepper. Coat chicken in flour, dip into beaten egg, then press into panko breadcrumbs.

Cook Until Crispy – Heat oil in your Pan and fry chicken until golden and cooked through (about 4-5 mins per side). Fry your sliced salami for added crunch.

Build Your Sandwich – Lightly toast sourdough, spread aioli, layer rocket and carrot, salami then add crispy chicken on top.
