Made with grated courgette, shredded chicken and two cheeses, these baked fritters are a simple way to add more vegetables and fibre to your meals. They’re quick to prepare and cook beautifully in the oven on a baking tray.

Serve with tomato chutney, a fresh green salad and crusty bread for a delicious and balanced meal.

Ingredients for Courgette and Chicken Fritters

2 large courgettes, ends trimmed

300g can corn kernels, drained

1 cup cooked chicken, shredded

2 spring onions, thinly sliced

1 cup wholemeal flour

1½ tsp baking powder

2 eggs, whisked

½ cup lite milk

½ cup cheddar cheese, grated

1/3 cup Parmesan cheese, grated

2 tbsp fresh thyme leaves, chopped

Salt and pepper, to season

How to Make Courgette and Chicken Fritters

1. Preheat the oven

Preheat oven to 220°C (200°C fan-forced). Line a baking tray with baking paper.

2. Prepare the courgette

Using a box grater, roughly grate the courgettes. Place the grated courgette into a clean tea towel or kitchen cloth and squeeze out as much liquid as possible. Removing excess moisture helps the fritters cook perfectly.

3. Mix the fritter batter

In a large mixing bowl, combine the grated courgettes, corn, shredded chicken, spring onions, flour, baking powder, eggs, milk, cheddar cheese, Parmesan and thyme. Stir until well combined. Season with salt and pepper.

4. Shape the fritters

Scoop about 1/3 cup of mixture per fritter and place onto the prepared baking tray.

5. Bake the fritters

Lightly spray the fritters with olive oil. Bake for 10 minutes, turn over, then cook for a further 5 minutes or until golden and cooked through.
