Sausages with a vege mash
Ingredients
4 sausages , regular or reduced-fat
2 Root vegetables of your choice. Kumara, Pumpkin, or Parsnip
3 medium potatoes
175g Brussels sprout or anything Green . Broccoli, Cauliflower with the stalk or peas.
4 tbsp milk
1 tbsp wholegrain mustard
Method
• STEP 1
Grill the sausages for 10-12 mins, turning frequently. Meanwhile, peel and roughly chop the root vegetables and potatoes, then cook in boiling salted water for about 10 mins. Shred sprouts, add to the pan for the last 2-3 mins and cook until all the vegetables are tender.
• STEP 2
Drain and mash the vegetables, then beat in the milk and mustard with salt and pepper. Serve with the sausages.
I go a step further and assemble in a shallow La Chamba dish, place sausages in base then make an instant Brown Onion gravy pour over and add mash to top . Put grated cheese of your choice over vege mash and grill. YUM.
