Mini Banana Bread Loaves

Ingredients

1 2/3 cups flour
1 tsp baking soda
½ tsp kosher salt
1 cup sugar
2 eggs
½ cup oil
4 large ripe bananas
2 Tbsp sour cream
2 tsp vanilla

Optional Toppings (see directions for recipe specifics):

Candied Oranges + Glaze

Banana Bread:

Preheat oven 350˚F. Sift flour with this Flour Sifter, baking soda and salt in a bowl and set aside. Mash bananas in separate bowl. With a fitted paddle in a stand mixer, beat sugar and eggs for 3-5 minutes. Add in oil and mashed bananas and mix until just incorporated. Then mix in sour cream and vanilla. Slowly add in dry ingredients – don’t over mix.

Prepare each cavity with baking spray with flour. Fill each mini loaf - try this Pan: Daily Bake 8 Mini Petite Loaf Pan cavity ¾ full and add desired toppings from below*. Bake 20-30 minutes or until a toothpick comes out mostly clean and the loaves are golden brown. Makes about 8-9 mini loaves

*Topping options:

Chocolate Chunk & Almonds
Sprinkle on top of batter in cavities before baking.

Cinnamon Streusel Topping:
2 Tbsp butter, melted
¼ cup brown sugar
¼ cup flour
1 tsp cinnamon
Pinch of salt
¼ cup toasted and chopped pecans (optional)
Melt butter and let it cool slightly. Mix in all other ingredients. Sprinkle on top of batter in cavity before baking.

Candied Oranges + Glaze

Candied Oranges
We used store-bought but could make candied oranges from scratch as well.
Orange Glaze Ingredients

½ cup powder sugar
Pinch of grated orange zest
1 Tbsp juice from an orange
If making candied oranges from scratch, prepare desired recipe. If using store-bought, add candied slices to top of loaf batter before baking.

Mix all glaze ingredients together in a small bowl. Drizzle over cooled candied orange loaves once ready.
